High for the Holidays: Potent Pinwheels

Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup of unsalted butter (softened)
  • 1/3 infused coconut oil
  • 1 cup packed brown sugar
  • 2/3 cup white sugar
  • 2 eggs, beaten
  • 1 1/2 teaspoons vanilla extract
  • Red and green food coloring

Step One

Mix together the flour, baking powder, baking soda and salt together. Sift the mix into a new both.


Step Two

Cream the butter and coconut oil with the brown and white sugars in a mixing bowl until mixed and fluffy. Beat in eggs and vanilla until mixture is smooth. Add flour mixture until evenly blended.

Step Three

Beat in eggs and vanilla until mixture is smooth. Mix in flour until evenly blended.

Step Four

Roll dough into a ball. Divide the ball into two even parts. Add red food dye to one ball and green food dye to the other. Add dye until you are satisfied with the coloring of your dough.


Step Five

Roll out each ball of dough into a rectangle. Make the rectangle about 1/4 inch thick. WARNING: This next part is difficult, but the end result is worth it. Place the green dough on top of the red dough or vice-versa if you please. Roll the dough hot dog-style. Wrap the log of dough with a sheet of wax paper, then wrap with a cotton towel. Refrigerate for at least 8 hours.

Step Six

Preheat the oven to 400 degrees F. Lightly grease multiple baking sheets.


Step Seven

Unwrap the log of dough and place on lightly floured wax paper. Slice the log into individual cookies, about 1/8 inch thick.

Step Eight

Spread dough slices evenly throughout the baking sheets. Bake in preheated oven for 5-6 minutes or until bottom edges are golden.
